Despite its name, buckwheat is not wheat—it’s an ancient grain related to sorrel and rhubarb, which produces a triangular, grain-like seed. That means buckwheat is naturally gluten free! Plus it’s full of vitamins and minerals including vitamins B2, B3, and B5 (riboflavin, niacin, and pantothenic acid), manganese, copper, magnesium, iron, phosphorus, and zinc.
Broken groat grits are made from coarse pieces of buckwheat broken during the hulling process. You can eat them as a breakfast cereal or grind them into flour and add them to waffles and pancakes for a nutritional boost.

Directions
Bring 3 cups water and ¼ teaspoon salt to a boil. Add 1 cup buckwheat grits, turn heat down, cover, and cook 10 min. Serve with honey or brown sugar and milk or milk substitute. Add fruit or nuts. Makes 2 ½ servings.
